Peel the potatoes and cut into chips 1cm thick. Soak for 10 minutes in cold water. Drain and pat dry. Fill a deep heavy-based pan one third full of oil and heat to 1602C, or until a cube of bread browns in 30 seconds.
Cook batches of chips for 4-5minutes, or until pale golden. Remove with tongs or a slotted spoon. Drain on crumpled paper towels.
Just before serving, reheat the oil to moderate 1802C, or until a cube of bread browns in 15 seconds. Cook the chips again, in batches, until crisp and golden. Drain on crumpled paper towels. Keep hot in the oven, Serve with the fish.
